Rotisserie Chicken Wraps With Avocado – Easy Weeknight Meal

I spend quite a bit of time each year trying to think of a beneficial New Year’s Resolution that I can follow through with. So, this year, my New Year’s resolution is to be healthier and avoid eating so much pasta. All of my easiest dinner meals always seem to include pasta. I’m all about the easy meals so, well, we eat a lot of pasta around here. Following through with my resolution, I’ve decided to meal plan as I always do, but ensure that my meals have at least some sort of nutritional value. I’m not doing a complete counting calories diet, but I want to improve what I eat and be overall, healthier.

This isn’t just for me, but definitely for the kids. Now, if your kids are anything like mine, healthy foods definitely aren’t their first go-to foods. Because of this, it makes it just a little bit more difficult planning foods I think the little picky eaters will approve of.

However, recently, I have been pretty successful with my dinner plans. These rotisserie chicken wraps were no exception and definitely a hit with the kids. I mean, they ate fresh spinach. Neither of my kids have ever even considered eating any sort of spinach until now. I considered this a success all around. These wraps are healthy and a quick meal for one those long days. It is an all around family approved recipe.

Below is all you need. I am loving the rotisserie chicken these days. They are so much easier than cooking your own, taste really awesome, and save a lot of time. I shop at Kroger so that’s where I have the best luck getting them.

Quick How To:

Begin by placing pieces of the rotisserie chicken on the bottom of the the tortilla. Be careful not to stuff it too full or it will fall apart while cooking.

Next, add slices of avocado. Personally, avocado is a real favorite of ours, so the more the better! I used at least half an avocado for each wrap.

Then, add the shredded cheese and spinach. Once again, make sure you will have enough room to fully wrap your tortilla. 

Next, drizzle with ranch dressing. Use as much or as little as you like. If you have the full fat version that I use, I would recommend not doing too much. It might be delicious, but will definitely add quite a few more calories.

Wrap it up like a burrito and place it on the stove on medium high, seam down. Once the seam is sealed together, flip it over and toast the over side.

Take it off the stove when it has a grilled look and enjoy your avocado ranch rotisserie chicken wraps!

Rotisserie Chicken Wraps With Avocado Ranch

Ingredients

  • 6 Whole wheat Tortillas
  • 1 Package Pre-cooked rotisserie chicken
  • 2 Cups fresh spinach or baby spinach
  • 2-3 Ripe Avocados
  • 1 Cup Shredded Cheese
  • 1 Cup Ranch dressing

Instructions

  • Begin by placing pieces of the rotisserie chicken on the bottom of the the tortilla.
  • Next, add slices of avocado.
  • Add shredded cheese and spinach to the top of the chicken and avocado.
  • Drizzle with ranch dressing.
  • Place on the stove on medium high seam down. Once the seam is sealed together, flip it over and toast the over side.
